One of our favorite fresh summer dishes is Ensalada Caprese! It is made with garden fresh ingredients so it's the perfect healthy recipe for cooking with kids.

For Caprese Salad, you need fresh basil, tomatoes, fresh mozzarella, salt, pepper, and a balsamic glaze. First, pick a bit of basil to wash. Nothing tastes better then when you grow it yourself, too!
Slice the tomatoes thinly with a child safe knife. Layer a tomato with basil on top then fresh sliced mozzarella, too. We love the pre-cut cheese but you can carefully cut your own too.
Repeat your layers until you've used up all of your ingredients evenly. If your salad stacks get too tall, use a toothpick to hold them all together!
Top with salt and pepper. Lastly, drizzle with a balsamic glaze. You can reduce your own balsamic vinegar but we love the store bought glaze, best! It's so easy and healthy that we eat this as a side salad all summer long!
