Peach Salsa

Our Peach Salsa recipe couldn't be simpler. Really, I gave our daughter several options to create her own recipe but she declared it perfect after only three ingredients! That's the beauty of cooking with kids. They know what they like and often it's healthier than what we might create as adults.

With fresh produce rolling in from our own garden and farmer's market stands, we are on a huge salsa kick right now! The kids definitely don't like any spice to their dips so I allowed our daughter to create her own salsa this time.

She sliced up a fresh peach, a tomato, and a green pepper with her child safe knife. Our cooking with kids series sure has improved her fine motor skills with lots of practice chopping ingredients!

We put the three ingredients (Seriously, that's it!) in our food processor and gave it a whirl. E tried the salsa on a spoon to see if we wanted to add anything else and declared that it was perfect. In fact she said, and I quote, "Good enough for a chip!"
