Crock Pot Chicken Soup with Rice

Is there anything more comforting than chicken soup? It's always better when someone else makes it too so for this Cooking with Kids recipe, I'm teaching our daughter how to make chicken soup with rice with the help of our crock pot!

We absolutely love our crock pot! For this recipe, we began by filling it with a carton of chicken broth, two sliced carrots, two sliced ribs of celery. two cloves of minced garlic, two raw boneless chicken breasts, and blanched and frozen zucchini from our garden. You can add whatever veggies you like in soup but you may need to adjust the amount of liquid (broth and/or water) to cover. We cooked this mixture on low for six hours. 

We took out the chicken to shred with two forks. This was excellent fine motor work for our daughter! At the same time you take the chicken out to shred, add in a cup of rice. We used brown long grain rice. Make sure that you aren't using instant rice!

We turned the crock pot to high for the last two hours. Alternatively, you could add the rice in with all of the other ingredients but it would be a bit more mushy, I'd imagine! Now, am I the only one with this book stuck in my head now that we've shared this recipe or is that just the kindergarten teacher in me refusing to stop?
