Peanut Noodles

We love Asian inspired food! Just this weekend we took the kids out for sushi and the very next day we made these peanut sesame noodles for dinner. This recipe is easy to make for when our kids want to help cook plus it's so delicious our whole family loves it!

As we've been cooking through the alphabet, our daughter has become a confident cook! She began this recipe by breaking dry spaghetti noodles which is fun and bonus fine motor practice. Our kids like their pasta shorter and more managable so not only does this activity provide a kid friendly kitchen prep task but it also cuts down on my time cutting the cooked noodles right before we eat. 

TIP: If your kids like their cooked noodles cut up use kitchen shears

While the spaghetti is cooking (we used half a pound of pasta) whisk 1/2 cup peanut butter with 1/4 cup hot water. 

Add 2 tablespoons of sesame oil, rice wine vinegar, and low sodium soy sauce. Don't you love when recipes call for equal amounts of ingredients? It makes it so much easier to remember!

When your spaghetti is cooked, drain all but a little bit of the cooking water. You'll want the starchy warm pasta water to help this delicious peanut sauce stick to the noodles. Toss the pasta with the sauce and enjoy!
