I'm sharing another one of my mother-in-law's very best recipes! It's simple enough that kids can cook it from start to finish and yet it's so delicious that our whole family gobbles these marinated tomatoes up no matter how many we make! Yum!

Slice two tomatoes. We usually only let our daughter use her kid safe knife but tomatoes slice much better with a serrated knife so I told her this was a big responsibility. She handled it beautifully!
Combine two tablespoons olive oil with two tablespoons red wine vinegar. Add in your seasonings of choice. My mother-in-law uses 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder, and one teaspoon dried oregano.
We only had garlic salt instead of powder so we used one whole teaspoon of that and another teaspoon of Italian seasoning. You can use fresh or dried oregano and/or basil. Honestly, you can't really go wrong using any combination of these spices, but I wouldn't add more than a teaspoon of each.
Whisk together the marinade. Mmmm, it smells great! The kids loved discussing the spices and their scents!
Pour the marinade over the tomatoes in a shallow container so they are all well coated to soak. You can leave the tomatoes out at room temperature until dinner time or refrigerate if you will be serving the next day.
